About Indian Cuisine
India extends from the Himalayan Mountains in the north to Kanya Kumari (Cape Comorin) in the south, approximately 2000 miles from North to South, and 2200 miles from East to West. It is roughly two-thirds the size of Europe, excluding Russia. India is a land of rivers and streams, mountains, plateaus, forests, and wildlife of every kind. No region in the world is more colorful or picturesque than India. Its ancient monuments and buildings designed by master-craftsmen of bygone days, its customs, festivals, religions, philosophy and art testify to one of the oldest and richest civilizations and are of absorbing interest.

Great have been India's gifts to the world including spices and the art of cookery, along with the game of chess and the decimal system. For centuries her people have perfected the skill with spices to transform often materials to ambosia. The use of spices, however, does not mean they are used in vast amounts, nor does it mean that all Indian food is extremely hot and spicy, as many Westerners believe. The dishes can be as hot or as mild as the individual chooses, since this is a matter of personal taste.

Most people in the West refer to "Curry" as if there were only one dish, instead of hundreds of them, all differing in flavor. Some are pungent while others are extremely bland depending again on personal taste. It is careful orchestrated use of spices, seasonings and flavorings that give Indian food its "Curry". There are countless other marvelous preparations such as biryanis, pulaos, kabobs, and the tandoori (open hearth oven) meats and fish, to name just a few.
